The best baked ribs dry rub

The best baked ribs ever!

        I have been making these ribs for years and they have been a huge hit at parties or just for my family. I have made three racks of ribs for a party and they are gone within minutes.

This recipe is simple and delicious. You can use baby back ribs or county style. I have even done this recipe with chicken as well. I go for whatever meat is on sale. I love a dry rub over a BBQ sauce because I am usually doing Paleo and most BBQ sauces are loaded with corn syrup and sugar.

This recipe you cook the ribs low and slow and let the meat steam. I promise it's worth the wait! I have always topped my meat in butter whether it's steak, chicken or ribs.


Ingredients:

2.5- 3lbs ribs
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon of smoked paprika
1 teaspoon of mesquite fajita seasoning ( found at WinCo or 4 drops mesquite liquid smoke)
1/2 teaspoon salt
1/2 teaspoon pepper
2 Tablespoon olive oil
3 Tablespoons butter


Directions:

Preheat oven to 325. Spray olive oil in 12x13 baking dish. Place ribs to fit. Next put all the seasonings even on the ribs. Drizzle olive oil across the meat. With your hands rub the meat so the oil and seasonings are massaged in. Cover the dish with aluminum foil. Bake for 3 hours. Cover ribs in butter ( I promise it's the best thing ever).  Devour like a caveman and eat up!

I like to shred mine up and mix in the butter. I  usinalso likeg the extra leftover meat in my eggs for breakfast.

The best Keto biscuits EVER!

Yesterday morning I was craving biscuits with butter and jam. I have googled and Pinterest ever keto biscuit I possibly could. I have tried recipes in the past and they all turn out the same. Eggy, dry, crumbly, fall apart. I hate when I am chewing and it's like sand in the back of my throat. So I got fed up and knew I could make something I could enjoy eating that wouldn't be eggy or dry.

I did it! Success! Finally a biscuit I can enjoy to eat and eat it with anything on it. Breakfast sandwich, biscuits and gravy, butter And jam... Endless possibilities. I hope you enjoy this recipe as much as I have.

Ingredients

2 cups almond flour
2 tsp baking powder (aluminum free)
1/4 tsp xanthan gum
Dash of salt
2 eggs
1 TBS whipping cream
1/3 cup melted butter

Directions

Place dry ingredients in a bowl and mix. Next melt the butter and let it sit. Add beaten eggs to the dry ingredients along with the cream. Slowly add butter. I do a tiny bit and mix and repeat until incorporated. Line baking sheet with parchment paper and preheat oven to 350. Add a hefty spoonfull of biscuit mix to the baking sheet and shape into a circle and flatten top. I leave mine about an inch thick. Bake for 15 minutes. Cool for 15 minutes and enjoy!

Place leftovers in a bag in the fridge. You can microwave or toast it the next day.

Keto chili cheese dog casserole

Since being on keto and wanting some really yummy fast food. I thought I might as well attempt a chili dog casserole because why not?!

First off if you love the American fast food chili dog place then you'll love this recipe. It's spot on in flavor. With simple ingredients you have in the home and a hour from start to finish. This recipe is amazingly fast.

Ingredients:

1 lbs grass fed ground beef
1 onion diced
2 garlic cloves diced
1 can petite diced tomatoes
1 cube beef seasoning
1 1\2 TBS cumin
1 tsp garlic powder
1 tsp onion powder
1\2 tsp smoked paprika
1 tsp salt
1 tsp pepper
7 hot dogs sliced
2 cups cheddar cheese

Directions:

Dice onion (Set a tiny amount to the side) Saute onion in olive oil on medium heat and add ground beef. Cook until no more pink. Add garlic and tomatoes and cook on medium high for 5 minutes. Add all spices and beef cube and stir. Add cut up hot dogs and 1 cup cheese. Turn off heat. Place in a 7x11 pan or something close to it. Top with the remaining cheese and cook for 25 minutes at 375. Once baked top with remaining onion and pour into a bowl.

Devour and enjoy your low carb meal!

Keto cheesy cauliflower

This recipe I have been making for 15 years. It's simple, minimal ingredients and fast. I don't even want to make a long blog today. I'll get to the point!

Ingredients:

1 medium head cauliflower
1 Cup sharp cheese shredded
1/2 Cup mayo
1 tbsp yellow mustard or dijan
1/8 tsp garlic powder
1/8 tsp Himalayan pink salt
1/8 tsp pepper

Cut the roots off the cauliflower and wash it. Place in microwave bowl and add 2 tablespoons of water. Wrap in plastic wrap and poke holes. Microwave 15 minutes or use an instant pot to steam. While steaming make the mixture by adding all the other ingredients. Place cauliflower in a baking dish. Plop on top the cheese mixture. You do not need to spread all over. Leave mixture as a plop. Broil 500 degrees until golden brown. Usually 5-8 minutes. Serve immediately!!!

Funeral potatoes done right

Ok, so let me tell you about the dozens of funeral potatoes I have tried here in Utah. I swear they were invented here but don't quote me. I have been to many church functions, family get togethers, and unfortunately funerals. Everyone of these have served funeral potatoes and I have to say say.... yuck!

Growing up in San diego I have never in my life heard of funeral potatoes. It was so foreign to me. People topping cheesy potatoes with cereal atrocious!!! Then one fine girls camp I finally was plated with this sloppy mess. I sat there staring at this plate of slop thinking "there is no way this will be good" I finally take the first bite and WOW! Amazing to my surprise.

Years later I have tried mushy, stringy, sloppy, flavor missing, soupy funeral potatoes. Some people top it with bread crumbs. DON'T I repeat DON'T!  So I have done some in the kitchen testing until I found the perfect yet simple way to make funeral potatoes. Please, please try my recipe out before trying someone else's. I promise you will be wowed and so will everyone else.

Ingredients:

1- 32 oz diced potatoes  (not shredded)
8 oz sour cream
2- 10.5 oz cream of chicken, celery or mushroom
2 Cups cheddar or sharp cheese shredded
1/2 Cup melted butter
1 yellow onion diced
3 handfuls corn flakes
1/4 tsp black pepper
1 tsp Himalayan pink salt
1/4 tsp seasoning salt

Preheat 375°

Pour almost defrosted potatoes in a bowl with diced onion. Add sour cream and cream of soup. Mix well. Add melted butter. Mix. Add 1 1/2 Cups cheese. Mix. Add salts and pepper. Mix and pour into 9x13 pan and flatten with back of spoon. Sprinkle salt and pepper on top. Add remaining cheese and crushed cornflakes. Bake for 45 minutes or until crispy cheese.

All the ingredients needed

Potatoes and onion 

Add sour cream

Add cream of chicken

Add cheese and stir

Add pepper

Salt 

Seasoning salt

Pour into pan

Pat down flat

Sprinkle salt and pepper. Add cheese

Crush corn flakes and sprinkle on top


Put into oven 

Look at that!

Oh yeah! So delicious!!!


Let cool 5 minutes and enjoy!

Best paleo drumstick recipe

 This is by far the best chicken I've ate in my life.  I think I dream of chicken. My worst nightmare is grilling or baking drumsticks. Every time I burn them and the inside is still raw and bloody. One day I was was thinking about giving them another try. But how would I cook it perfectly without burning them or having it raw inside.

BAM! Boil it first. Omg, why have I not thought of this before? So I went out and bought some organic chicken drumsticks. Bonus! It's on sale for only $2.88 for 5 organic drumsticks.

In the kitchen I just decided to make up what I envisioned and I'll have to say I have made this recipe every other week for 2 weeks now. I'm totally obsessed.

This chicken is crispy, juicy, tasty, addictive. Everything chicken should be.



Ingredients:

  • 1/2 tsp smoked paprika
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp Himalayan pink salt
  • 1/4 tsp dried oregano

  • *Extra virgin olive oil and whipped butter 

    Directions: 

    Mix all dry ingredients together. Boil chicken until almost cooked. Preheat oven to 375°. Pat dry chicken with paper towel. Place chicken on parchment lined baking sheet. Pour a little Olive oil on chicken and coat with dry ingredients. Bake in oven for 35-40 minutes until chicken skin is crispy or extra crispy. Once out of the oven this step is optional but I think a must. Coat with whipped butter and sprinkle a pinch of salt. Eat up!!!

    Salt the water!


    Add chicken

    Boil until almost cooked

    Place on paper towel and dry

    Simple crockpot paleo chili (kid friendly)

    With Autumn on it's way and summer is about to end I'm feeling the urge to make my simple yet delicious paleo chili. It's not spicy at all because my kids wouldn't eat it. I always add hot sauce or hot peppers to my individual bowl. So don't feel like I'm taking anything away from you.

    I have to always make my food kid friendly,  so this recipe is a sure kid pleaser. My girls always ask for it and it's packed with hearty vegetables so win win for me.

    Ingredients:

    2 lbs mild sausage
    1 lbs ground turkey, grass fed beef, elk, bison.
    1 diced onion
    2 chopped zucchini
    2 chopped carrots
    1 green bell pepper diced
    3 14.5 oz diced petite tomatoes
    1 TBSP smoked paprika
    2 TBSP ground cumin
    1 TBSP beef base
    1 tsp garlic powder
    1 tsp black pepper
    1 tsp salt
    1 1/2 cans water


    Directions:

    Place all meat in frying pan and cook until brown.

    Next open cans of tomatoes and place in crock pot.
    Cut up all vegetables and add into crock pot
    Once meat is brown add on top of veggies

    Start adding the spices




    Stir all ingredients and add water.  Cover and cook on low 8 hours or high 4 hours. 


    Simple directions:

    Place meat in frying pan and cook until browned. Open cans of tomatoes and pour into crockpot. Dice up zucchini, onion, carrots, and bell pepper. Pour over tomatoes. Add browned meat into crockpot.  Next grab your spices, measure, and place on top of meat. Stir. Add water and place lid on crockpot. Turn on low for 8 hours or in a hurry 4 hours. Top with cheese, avocado, sour cream, hot sauce, or anything that sounds perfect. Enjoy!
