Healthy oatmeal peanut butter cookies

I absolutely love peanut butter. But with all the new nut butters it's hard to decide which to choose. I usually eat cashew butter or sunbutter. But today its all about peanut butter.

 This cookie is rich in flavor and packed with protein. Simple ingredients all organic make this cookie worth every bit.

 I stay away from white and brown processed sugar and opt for a natural healthy pure sugar like agave, honey, maple syrup, stevia, dates, and coconut sugar. Coconut sugar is exactly what brown sugar taste like. So using it in place of brown sugar in cookies and homemade bbq sauces is a must.

Ingredients:

3/4 C organic rolled oats
1/2 tsp organic cinnamon
1 Tbs baking soda
Pinch himalayan sea salt (small pinch)
1 large egg ( room temp)
1 Tbs maple syrup
5 Tbs coconut sugar ( blended fine)
2/3 C peanut butter
1 tsp vanilla( good quality)

Pre heat oven 350°

Mix oats, cinnamon, baking soda, and salt in a bowl.
In a separate bowl beat egg. Add in peanut butter and maple syrup mix well. Next add in coconut sugar and vanilla beat with whisk until combined.
Using a spoon add in the dry ingredients into wet half at a time until mixture is completely combined.
Spoon a tablespoon onto a silicone lined baking sheet. Should make 12 nice size cookies. Bake for 8-10 minutes. But check during the cooking process.  Cool for 2 minutes and eat up!
