I absolutely love peanut butter. But with all the new nut butters it's hard to decide which to choose. I usually eat cashew butter or sunbutter. But today its all about peanut butter.
This cookie is rich in flavor and packed with protein. Simple ingredients all organic make this cookie worth every bit.
I stay away from white and brown processed sugar and opt for a natural healthy pure sugar like agave, honey, maple syrup, stevia, dates, and coconut sugar. Coconut sugar is exactly what brown sugar taste like. So using it in place of brown sugar in cookies and homemade bbq sauces is a must.
Ingredients:
3/4 C organic rolled oats
1/2 tsp organic cinnamon
1 Tbs baking soda
Pinch himalayan sea salt (small pinch)
1 large egg ( room temp)
1 Tbs maple syrup
5 Tbs coconut sugar ( blended fine)
2/3 C peanut butter
1 tsp vanilla( good quality)
Pre heat oven 350°
Mix oats, cinnamon, baking soda, and salt in a bowl.
In a separate bowl beat egg. Add in peanut butter and maple syrup mix well. Next add in coconut sugar and vanilla beat with whisk until combined.
Using a spoon add in the dry ingredients into wet half at a time until mixture is completely combined.
Spoon a tablespoon onto a silicone lined baking sheet. Should make 12 nice size cookies. Bake for 8-10 minutes. But check during the cooking process. Cool for 2 minutes and eat up!

healthy banana blueberry muffins
I could not find any healthy muffin recipes that I would feed my kids online. Recipe after recipe I would find "healthy" muffins loaded with refinded sugar and wheat. I came up with this simple, kid friendly, figure healthy muffins. Made with organic oats, applesauce ( no sugar) raw honey, organic cinnamon.
Ingredients
1 cup ground oats ( oat flour )
1 1/2 cup oats
2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp himalayan sea salt
2 ripe bananas (smashed)
1/3 c applesauce
1/4 c honey
1 C blueberries
Pre heat oven to 350° Prepare muffin tin using paper cups or oil.
Mix oat flour, oats, cinnamon, salt, baking powder in a bowl. In a seperate bowl add applesauce, honey, bananas ( mashed). mix wet ingredients into dry ingredients mix well. Fold in blueberries. Scoop batter into the muffin tin. Fill until batter is gone. Cook for 20-25 minutes. Cool and eat up. Store in fridge up to a week if they last that long.
For vegan you can substitute honey for agave or maple syrup.
